Simple and Delicious Homemade Macaroni and Cheese Recipe
Macaroni and Cheese: the ultimate comfort food! This macaroni and cheese recipe is, yet another, borrowed from my mother-in-laws archives. She (and I) make this dish often and usually serve it with ham. This is sometimes our traditional Easter or Christmas meal. It's just THAT good!
This macaroni and cheese recipe is so easy and simple; it has only 3 wholesome ingredients. Yet, it is so delicious that it is guest and even holiday worthy.
You can serve macaroni and cheese as a side dish or an entree. Like I mentioned before, it is a great accompaniment with ham, green beans and rolls. As an entree, I would serve it with a salad and fruit. It also makes a great vegetarian dinner.
As with my previous recipes, I like to make some wine pairing suggestions. Yes, you can drink wine with mac-and-cheese! If you are serving this recipe with salty ham, I would pair it with a sweet white wine such as a Reisling. If the mac-and-cheese is your entree, pair it with a light Pinot Grigio or crisp Chardonney.

JUST 3 INGREDIENTS:
- 16 ounce pack Elbow or Ziti Noodles
- 10 ounce block Extra Sharp White Cheddar Cheese
- Milk, enough to almost cover the noodles

How to Make Simple and Delicious Macaroni and Cheese
- Boil Macaroni in salted water until tender. Drain and set aside.
- Grate the entire block of Extra Sharp White Cheddar Cheese in a Cuisinart or by hand.
- In a 9 in. X 13 in. baking dish, combine the noodles and all but a third cup of the shredded cheese. Mix well.
- Pour milk over the macaroni and cheese mixture until *almost* to the top of the noodles. Top with remaining shredded cheddar cheese. Sprinkle with salt and pepper to your liking.
- Bake at 350 degrees Fahrenheit for one hour or until the top is lightly browned.
- Serve hot and enjoy!!!!
Fun Variations!
- Try adding steamed broccoli and/ or cubed ham before baking.
- Use a blend of different cheeses such as Pepper Jack, Parmesan, Swiss, Mozzarella, Provolone, Gouda, etc.
- Mix your favorite fresh salsa into the pasta before baking
- Add peas and/or corn
- Serve with rotisserie chicken and coleslaw
- Try bacon and cheddar
- Or just keep it simple and go with the classic!
